Chef Nooror's recipe:
Ingredients
80 grams chicken breast fillet (bite-sized sliced)
3-4 stems coriander stem (finely chopped)
1 leaf kaffir lime leaf 瘋柑葉 (finely sliced)
For paste
2 cloves garlic(peeled)
1/2 stem lemongrass (half bottom stem, sliced)
1 root coriander root
Seasoning
1 tablespoon oyster sauce
1/2 tablespoon light soya sauce
1 teaspoon sugar
1 teaspoon chinese whisky
Garnish
crispy deep-fried crushed lemongrass (1/2 stem)
Roughly pound the lemongrass to make it fluffy chunky. Squeeze the juice out. Lightly coat with flour before deep-fry it. Deep-fry in vegetable oil until it turns into golden brown. Set aside.
